I was having a look back in the True Epicure archives today. I realized as I was perusing posts, that I have been corn-free for over four years. Four years? Really? June 15, 2005 was the last day I knowingly ate a corn product.
I’m more than a bit frustrated by the fact that corn still isn’t considered a major allergen. More importantly, the current requirements for food labeling are woefully inadequate. It’s great that wheat and nuts are now noted on labels, but how about labeling food so that we know the derivation of ALL ingredients? Of course the ideal would be to not eat anything that has a particular allergen in it, but sometimes that just isn’t feasible. So how about it, FDA? Be brave and require sourcing on ALL ingredients!
