Steal My Lunch

I got the nicest compliment today:

“You know, if I were going to eat someone else’s lunch out of the fridge (and I wouldn’t, but if I did), I’d steal yours.”

I decided that was the nicest compliment I’ve received in a long time. I know, most people like to be told that they have nice clothes or nice hair, but I like it when people compliment my food. Don’t get me wrong, I like it when people compliment me on my clothes and hair, but to be complimented on my food is darned cool.

Apparently, I often bring very interesting lunches to work. I wouldn’t have thought that about myself, but I guess other people think so. I just try to bring things that will make me want to eat my lunch in, rather than buy something that costs three times as much, and isn’t as good.

Today’s fare was:

Tuna and cannellini bean salad (recipe from the back of the Triscuit box, by you-know-who)
Triscuits
sharp cheddar cheese (that wasn’t so sharp, but I like it SHARP)
red grapes
purple grape juice

Apparently the tuna and cannellini salad was pretty interesting. It was definitely tasty.

The recipe (adapted slightly):

1 can (15 oz) cannellini (Great Northern, white) beans, drained and rinsed
1 can (6 oz) tuna in water, drained well and flaked
1/4 red onion, finely chopped. [I didn't use quite this much]
2-3 sprigs fresh rosemary, freshly chopped [I used a small amount of dried, which was plenty]
1 cups arugula, finely chopped [baby spinach works too, but it doesn't have the zip that arugula does]
juice from one lemon
1 Tablespoon extra virgin olive oil [the recipe lists the dreaded acronym, but you know how I feel about that!]
1/4 teaspoon salt
1/8 teaspoon pepper
and don’t forget the Triscuits!

Combine beans, tuna, onion, rosemary, and arugula. Dress the salad with lemon juice, olive oil, salt, and pepper. Serve with crackers.

    Yep — I would have loved that compliment too! And that tuna/bean salad sounds yummo!
    I’ll have to try it out.
